Pancake Cereal

Imagine pancakes, but tiny and crispy. Voilà Pancake Cereal! It’s the latest craze and I can confirm that they are cute and delicious, a great way to mix up your breakfast. They make a great kids snack too, particularly handy in these times of homeschooling. And who doesn’t enjoy taking an old classic like pancakes and mixing it up a bit?

All you need is regular pancake batter and a squeezy bottle, but if you don’t have the latter, a piping bag or a zip lock bag with the end cut off works too. And if you want to spice things up with colours or flavours you can do that too (i.e. cacao powder for chocolate flavour, freezedried strawberry powder, matcha … the possibilities here are endless).

You can eat pancake cereal with milk or just maple syrup, although they could go a little soggy with milk I would imagine. I enjoyed mine with some coconut yoghurt and a few chopped strawberries, which was delicious.

Crispy mini pancakes are all the rage and why not … such a cute idea for your breakfast.

Ingredients

  • 1 1/4 cup plant milk
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 mashed banana
  • 1 cup all purpose flour
  • 2 tbsp maple syrup

Instructions

  1. In a large bowl, mix the milk with the vinegar, baking powder and baking soda. Leave to stand for 10 minutes to let it thicken.
  2. Add in the mashed banana, mix, then the flour, mix and finally the maple syrup. ensure everything is well combined.
  3. Heat a large non-stick frying pan to medium heat.
  4. Add the batter to a clean squeezy bottle and drop small coin shapes into the pan.
  5. Fry on one side until golden, then turn over with a spatula and fry for another minute on the other side.
  6. Remove and serve

Notes:

* If using a bottle, make sure there are no lumps in your bottle as the opening can clog up otherwise. * If using a zip lock bag, only cut the tip off right before you pour the batter into the pan. * You don’t have to flip the mini pancakes one by one, you can just toss them with a spatula. * Most flours will work here (plain, spelt, buckwheat etc).
