Dark Chocolate Rice Crispy Treats

A good crunchy rice crispy treat is not just for small children … big ones enjoy these just as much. A great way to use up anything crunchy you might have in your kitchen cupboard, then throw in some healthy seeds for an extra boost of vitamins and minerals.

You can use anything crunchy … I used rice krispies, but cornflakes, cheerios, popped amaranth, brown rice puffs would work just as well. And if you don’t have chocolate chips, regular dark chocolate is absolutely fine too.

Dark Chocolate Rice Krispy Squares

A healthy treat that includes chocolate and seeds for an extra nutritious boost.

Ingredients

  • 1 1/2 cups dark chocolate chips (or 200g dark chocolate)
  • 1/4 cup coconut oil
  • 1/4 cup peanut butter
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 cups rice krispies
  • 1/2 cup almonds
  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup raisins

Instructions

  1. Melt the chocolate chips and coconut oil in a bain marie. Add the peanut butter, maple syrup, vanilla, salt and mix everything well.
  2. Chop the almonds and seeds roughly (or pulse in a food processor for a few seconds) and add to a big bowl with the rice krispies.
  3. Pour the chocolate mix over the dry mix and stir well to ensure everything is coated.
  4. Fill into small muffin cases or silicon moulds and even out.
  5. Place in the freezer for 2 hours.
  6. Remove from freezer. Keep in an airtight container in the fridge. They can also be frozen and will only take a short while to defrost.

Notes:

* DARK CHOCOLATE: these rice crispy squares have a strong dark chocolate flavour. If you prefer a milder taste, use milk chocolate instead (or a dark chocolate with a lower cocoa content). * PEANUT BUTTER: Any kind of nut butter works. * RAISINS: Any kind of dried fruit works. * SEEDS: Flax seeds and sesame seeds work well too here. Silicon moulds: You can also use muffin cases. Alternatively pour the mix into a lined baking sheet if you don’t have any moulds, but they will be a little harder to cut. Bain marie: this is a pot placed over boiling water in another pot. In my experience, it is the best method to melt the chocolate, coconut oil and peanut butter. You can do it in a microwave in short bursts, just be careful that the chocolate and peanut butter do not burn.
