Energy Ball Christmas Tree

Merry Christmas Balls! Yes Christmas week is finally here and I am surely not alone in thinking that this year it all feels a little surreal. But if you’re feeling low and down in energy, I have you covered with this very special Christmas Tree made from my Pumpkin Spice Energy Balls. Enjoy these in the days leading up to the Big Day, as a snack before unwrapping presents or when preparing Christmas Dinner. Whichever time it is that you choose, I hope you have a beautiful day.

Matcha & Edible Gold Energy Balls

I used matcha powder, edible gold and silver powder, and crushed freeze dried raspberries to cover the energy balls. A little tip: you can prepare the energy balls a few days ahead and then keep them in a tub in the fridge or the freezer. But only cover them with the various powders right before consumption as the powders will get a little wet after a while and they won’t look as nice anymore as they do right after you have covered them.

I used my Pumpkin Protein Energy Balls recipe for these because they have a nice festive taste to them, but really feel free to use any Energy Ball recipe that you like. Star Anise and pomegranate seeds make beautiful little decorations on this Energy Ball Christmas Tree. And if you don’t have silver or gold powders, some dessicated coconut will also look beautiful on this tree.

Energy Balls Christmas Tree

Keep your energy levels up during the Festive Season with this beautiful Energy Ball Christmas Tree.

Ingredients

  • 28 small Pumpkin Protein Energy Balls
  • Matcha or other Supergreen Powder
  • Edible Gold Powder
  • Edible Silver Powder
  • Crushed freeze dried raspberries
  • Cinnamon stick
  • Icing sugar
  • Star Anise
  • Pomegranate Seeds

Instructions

  1. Make one batch of the Pumpkin Protein Balls and roll into 28 small balls.
  2. Roll in the different powders, then display on a large platter or wooden board.
  3. Add cinnamon stick, star anise and pomegranate seeds.
  4. Use a sheet of paper, large cardboard or magazine to create a clear line. Sprinkle the free area with icing sugar to outline a triangular tree shape.

Notes:

You can make the energy balls ahead of time and keep in the fridge or freezer. Roll in the powders on the day of consumption.
