Tofu Scramble

First of all I should admit that I have been following a plant based diet for over 3 years now, and it took me nearly all this time to finally try out Tofu Scramble earlier this year. Well I can promise you I have made up for this lack in my life - this dish is so good, it has become a regular staple in our house.

Chances are, these are all ingredients you have in your kitchen so you should be able to whip this up anytime you fancy it for breakfast, lunch or dinner. It lasts a few days in the fridge too so worth making a bigger batch.

Tofu Scramble

Tofu Scramble

A delicious high-protein dish for breakfast, lunch or dinner.

Ingredients

  • 1 tbsp rapeseed oil
  • 1 diced medium onion
  • 1 minced garlic clove
  • 2 cups diced vegetables (pepper, courgette, broccoli stalks)
  • 2 tbsp tahini
  • 1 tbsp tamari (or soya sauce)
  • 1 tbsp Dijon mustard
  • ½ tsp ground turmeric
  • 400g extra firm tofu
  • ¼ cup nutritional yeast
  • Salt & Pepper

Instructions

  1. Heat the oil in a pan. Add the onion and sauté at medium heat (be careful not to let it burn).
  2. During this time, press the tofu to remove any excess water. Crumble with your fingers into a bowl.
  3. Add the garlic to the onion in the pan.
  4. After a further 2 minutes, add the vegetables and stir, heat through for about 5-7 minutes until softened.
  5. In a bowl, mix the tahini, tamari, mustard and turmeric. Add 1 or 2 tablespoons of water to make it a little thinner.
  6. Add to the pan and mix with the vegetables.
  7. Add the tofu and stir through. Cook for another 2-3 minutes.
  8. If using, add the spinach and heat until it is wilted.
  9. Serve with a sprinkle of pepper.

Notes:

Can be kept in the fridge for 3-4 days.
